What is in the sauce for 'Thai chicken and cashews" that makes it spicy?

I have come across a few recipes but they don't seem to have the spicy flavour as to what I buy from the take-away.What is in the sauce for 'Thai chicken and cashews" that makes it spicy?
Fried dried chili which is less spicy than small chili.

Everybody makes that dish a little differently. One of my local favorite restaurants here in rural Thailand makes it and it is not spicy at all. It has lots of dry roasted chillis in it but they are not the spicy kind.



Some places use quite a bit of "prik thai dam" (ground black pepper) and that does add some heat to it. But they don't use the hot chillis like "prik khee noo".What is in the sauce for 'Thai chicken and cashews" that makes it spicy?
Depend on what restaurant you eat.
