Does anyone have a good pad thai recipe?

*Primavera Pad Thai*



INGREDIENTS



8 oz pasta, uncooked

1-13.5 oz can Lite Coconut Milk

1-3.5 oz packet Peanut Sauce Mix

1 cup chopped onions

1 cup chopped tomatoes

3 tablespoons Fish Sauce (Seasoning Sauce)

1/2 cup green onions (scallions), cut into 1" pieces



DIRECTIONS



Put a pot of water on to boil. Cook pasta and set aside.

Put a large skillet on high heat. Add Lite Coconut Milk and Peanut Sauce Mix. Stir and bring to a boil. Reduce heat and simmer 3-5 minutes or until thickened.

Add onions, tomatoes, and Fish Sauce. Stir and simmer for 2-5 minutes or until onions are just tender.

Add green onions and Peanut Sauce with vegetables to pasta. Toss and serve.

Pad Thai

1/2 pound vermicelli, cooked

2 tablespoons olive oil, divided

3/4 cup water

1/4 cup low sodium soy sauce

1/4 cup fish sauce

2 tablespoons brown sugar

2 large eggs, slightly beaten

3/4 pound chicken breast halves, cut into 1-inch pieces

2 cloves garlic, minced

1/2 pound shrimp, peeled and deveined

1/2 cup green onion, cut 1 inch thick

2 teaspoons paprika

2 cups bean sprouts

1/2 cup cilantro, chopped

2 tablespoons peanuts, chopped

6 lime wedges



In a large bowl, toss cooked noodles with 1 teaspoon olive oil; set aside.



In a medium bowl, combine water, soy sauce, fish sauce and brown sugar; set side.



In a large nonstick skillet (or preferably a wok), heat 1 teaspoon olive oil over medium high heat. Add eggs and stir fry for 1 minute. Add eggs to noodles. In the same skillet, heat 1 teaspoon olive oil over medium high heat. Add chicken and garlic; stir fry for 5 minutes.



Add chicken mixture to noodle mixture.



In the same skillet, heat 1 tablespoon olive oil over medium high heat. Add shrimp, onions and paprika; stir fry for 3 minutes.



Toss the noodle mixture and the soy sauce mixture into the skillet and heat through (5 minutes).



Remove from heat; toss with bean sprouts and cilantro. Sprinkle with peanuts. Garnish with lime wedges.

Your best bet would be to go on www.youtube.com and search for Pad Thai. I've found a recipe that I have used, that I really enjoy. This is one of my new secrets to cooking, who needs cooking shows when you now have Youtube to use anytime!

*Note: ingredients can be found at your local asian market, or look online for asian grocery.



*Definitely include the fish sauce and dried shrimp. This makes the dish exotic and is essential to the Thai flavor. Also try to use the ingredients listed for an authentic taste and keep replacement to a minimum, unless of course you're not daring enough. But I think we live in a time in which we Americans can try new things, and experience new cultures.

PHAD THAI



1/2 lb. dried rice noodles, 1/8" wide

Warm water

1/2 lb. shrimp or chicken or pork

1/4 c. fish sauce

1/4 c. %26amp; 2 tbsp. sugar

2 cloves finely chopped garlic

1/4 c. %26amp; 2 tbsp. white vinegar

1 tsp. paprika

4 slivered green onions

1/2 c. oil

2 eggs

3/4 lb. bean sprouts

2 tbsp. ground roast chili

3/4 c. ground roasted peanuts (peanuts finely chopped)

Lime wedges



Soak noodles 30 minutes until pliable and drain (sometimes it takes longer). Mix sauce (sugar, vinegar, paprika and fish sauce). Set aside. Heat wok, stir fry meat, add noodles. Add garlic and sauce. Tuck eggs under noodles and add oil as needed. Add sprouts and garnish with green onions, peanuts and lime wedges



OR



PHAD THAI (THAI FRIED NOODLES WITH

SHRIMP)



1 lb. thin Thai rice stick noodles

10 med. size shrimps, shelled and cleaned

2 eggs, lightly beaten

1 c. bean sprouts (preferably fresh)

1 tbsp. nampla (fish sauce)

1/4 c. sugar

1 tbsp. ketchup

1 tbsp. minced garlic

1/2 c. vegetable oil



GARNISH:



1 tbsp. chopped spring onion

1 tbsp. chopped fresh coriander leaves

2 lemon wedges

1 tbsp. coarsely ground peanuts

Additional raw bean sprouts

Dash of chili powder or red pepper



Soak noodles in warm water for 15-20 minutes, drain. Place bean sprouts in cold water. In a large frying pan or wok, heat oil and saute garlic over medium to high heat until light brown. Add shrimp and stir-fry until well done. Add sugar, nampla, ketchup to wok, stirring together. Add eggs, then noodles, and stir-fry mixture until noodles turn orange. Drain bean sprouts and add to wok. Stir-fry another 2-3 minutes. Put on serving plate with raw bean sprouts arranged on side. Sprinkle top with ground peanuts, spring onion, coriander, chili powder and garnish with lemon wedges. Serve hot.



OR



PHAD THAI



1 pkg. med. rice noodles

Vegetable oil

3 eggs, beaten

2 c. fresh bean sprouts

1 bunch scallions, cut sm.

1 clove garlic, crushed or cut sm.

1/2 tsp. fish sauce (Squid Brand)

1/2-1 c. chopped dry roasted peanuts

Parsley or cilantro

Cooked shrimp (optional)



Bring water to a boil. Add noodles and turn off water. Let sit 3 minutes; drain and set aside.

Heat a little vegetable oil in a wok or frying pan. Pour in beaten eggs and cook until firm. Don't stir. Remove from pan and cut in thin strips. Set aside.



Saute garlic, scallions and bean sprouts in a little vegetable oil. Add fish and oyster sauces and mix well. Add drained noodles and mix again. Add strips of egg and mix.



Put on a serving plate and garnish with chopped peanuts, parsley or cilantro and, if desired, cooked shrimp.



Serves 5.
