THAI LEMONGRASS SOUP
8 c. chicken stock
1/2 - 1 bunch cilantro
juice of 1 lime
1 inch piece of galangal (or ginger), thinly sliced
1 tsp crushed red pepper, to taste
1 Thai red chili pepper, cut into rings
2 tbsp nam pla (Thai fish sauce)
pinch of palm sugar, to taste
a few stalks of lemongrass (use about 6)
Bring the broth to a simmer. Add crushed red pepper and simmer for 5 min. Add lemongrass and galangal, simmer for another 5 min. Add the rest of the ingredients and simmer a few minutes more. Serve hot.

I love Thai soups and one of my favourites has chicken in a clear broth with cilantro, chilies and tamarind. Tamarind is made from the fruit of the same name and is it available in a paste form which is commonly used in Thai cooking.
Tamarind paste. Check foodtv.com and search for tamarind and you'll find some Thai soup recipes.
