Also, I have heard in order to roll them properly you need a bamboo mat. Is this true? Is there anything else I could use as a substitute?

VEGETARIAN SPRING ROLLS
20 sheets spring roll wrappers
2 carrots
1 white cabbage
1 cup dry flavoured soy mince
300 g beansprouts
salt pepper
oil for frying
for dip:
soy sauce
white vinegar
Shred carrots and cabbage. Add beansprouts. Soak soy in a little bit of water untill damp. Add soy to mixture; salt and pepper to taste.
Wrap into spring roll sheets and then fry in oil.

No you do not need a mat, and get ready for some tricky rolling. You need two things, a deep shallow container to fit the paper in, and warm water. When you soften them right, they get sticky and flexible and all you need is your hands, you just pull back the wrapper at the end closes to you, then roll over the filling then pull, and wrap like a burrito. Just make sure that you get it tight. It takes a little practice to get the technique. You see the rice paper needs to absorb lots of water, and if you use wood the paper is being robbed from absorption. When you soften the paper place it in the warm water till almost soften but not all the way, then lay it flat and let it continue to soften, once clear you can top and roll.

I do mines with Julienne cucumbers
carrots
mango/papaya
chopped up baby greens with mint and cilantro
somen noodles- boiled
or rice noodles seasoned with soy
..you can add sprouts or meat
Make sure you always lay the noodles down first. No liquid or wet items it will melt the paper.
And you can buy sweet chili sauce already in the bottle, it is a pill to make.
