What is a good seasoning for chicken when making a Thai peanut sauce?

I LOVE Thai peanut sauce and I found this really simple recipe at foodnetwork.com. It's a recipe by Tyler Florence, who usually cooks with good flavor, however, I'm Hispanic and I NEVER season my meats with ONLY salt and pepper. I could use Adobo which is what I normally use, but would it be a good combination with the basic taste of a peanut sauce or would it clash in tastes? Is there a better blend of seasonings that would go well with the chicken before I cook it?What is a good seasoning for chicken when making a Thai peanut sauce?
maybe a little marinade of lime juice, garlic and sesame oil...

salt and pepper will do. I wouldn't go with Adobo if you want the peanut sauce to shine through.
With Thai peanut sauce, I usually season the chicken with salt, pepper, and rub on a little bit of sesame oil. Admittedly it's pretty mild, but the sesame flavor does shine through. What is a good seasoning for chicken when making a Thai peanut sauce?
