Thai green chilli seafood sauce?

I went to a thai restaurant the other day that served this vinegar green chilli sauce with bbq squid. It was a bit thick and very very green. Anyone have the recipe for this?Thai green chilli seafood sauce?
Heres two kinds of Seafood Chile Sauce:

GREEN CHILI SAUCE



* 3 cloves garlic, crushed

* 3 large green chilis, slip open, seeded and chopped

* 3 coriander roots, scraped clean

* 3 chopped shallots

* 5 to 6 bird's-eye chilis (optional)

* 2-3 tbsp shaved palm sugar

* 2-3 tbsp lime juice

* 2 tbsp fish sauce



1. Grind the garlic, green chilies, coriander roots, shallots and bird's-eye chilies, if using, in a mortar and pestle or blender.

2. Add the palm sugar, lime juice and fish sauce and mix well. Yields 戮 cup.



Usually eaten with seafood.

SWEET AND SOUR CHILI SAUCE



* 3 shallots, thinly sliced

* 陆 tsp dried chili flakes or ground red pepper

* 2 tbsp fish sauce

* 2 tbsp lime juice

* 2 tbsp sugar

* 1 tbsp water



1. Place all the ingredients in a saucepan and bring to boil over medium heat. Reduce heat to low and simmer for 5 minutes until sauce thickens.

2. Remove from heat and serve with pork or chicken.



NOTE: Bear in mind that the amounts stated above of chili, fish sauce, sugar and lime juice can all be altered to suit your personal tastes. That is what's so wonderful about these recipes.



TIP: When you have to grind ingredients, grind the tougher items first, add a little oil or water and remember, if using a blender, do not overload. Store the unused portions of sauce in an airtight container.



Here are some other common ingredients used in Thai Dishes: Thai basil, cardamom, garlic chives and of course, lots of chilies.
