I love the noodles in this dish.Do you have a good recipe for Thai"Lad Nar"?
You can find the wide rice noodles at any Thai or Vietnamese grocery store.
1. Rice noodles cut to about 1/2 inch wide.( 1 package)
2. Chinese broccoli or regular broccoli cut into bite size pieces.
3. Any type of meat sliced into bite size pieces. (beef, chicken, pork or even shrimp)
4. Tapioca starch.( to thicken the gravy)
5. Fish sauce.( to taste)
6. Ginger.( 1 tbs for lad nar)
7. Garlic.( 2 tsp)
8. Thick black soy sauce.( for color)
9. Soup stock ( for lad nar)
Make sure your pan is hot. Add 2 tbs of oil, then add the noodles in even layer. Let it ist for few minutes to crisp. Turn over and add black soy. You can omit if you want. Remove from the pan and set it aside. Using the same pan add more oil and brown the galic and ginger. Then add the meat. When meat is no longer pink, add the veggies and soup stock. Bring to boil. Meanwhile mix tapioca starch with some water ( about 1 cup water to 4-5 tbs of starch). Once the stock boils add the starch mixture and stir till thickens. Add fish sauce to taste. Serve over noodles.
