Kedgeree why different recipes?

Now I am a good cook, if you cook thai curry or a roast etc. its a fairly standard recipe world-wide.



Now kedgeree has so many different recipes its a completely different meal - now this is an english dish so why?Kedgeree why different recipes?
Anglo-Indian dish consisting of rice mixed with flaked fish and hard-boiled eggs. The name coming from the Hindi word khichari a dish of rice and lentils.
I thought it was a dish of Indian origin? But no matter.



The English version is simply smoked fish (usually Haddock), egg, and cayenne pepper mixed into rice, however like many dishes it gets bastardised and modified to suit local ingredients. FWIW mine is the above, but with plenty of paprika a dash of Tabasco and some cream.Kedgeree why different recipes?
English recipe? As English as tea!!! Look at where the word originates. Paella is the same - no one recipe, depends on the region you're in. Coastal areas include lots of fish and shellfish, inland ones will contain more meat/veggies etc. Think about a real English food - Cornish pasty: there must be half a dozen different recipes for this.
I have been making it for years with many different fish. There is a good recipe in "the two fat ladies ride again" cookbook, though I tend to use curry powder rather than the spices. For an explanation of the origins:

Different personal tastes, regions where recipe originated. It's like the all regions of the US, England, etc...where there are different speach variations but it's all the same language. It's all the same recipe but a different style.
Different people like different things. I love thai food and my hubby doesn't. We are alike on that level on alot of things.
Different tastes.
