How do I make the Thai dipping sauce they serve with their spring rolls?

My husband %26amp; I are crazy about Thai Cuisine and love eating out. We love getting spring rolls and the dipping sauce that goes with them. We want to recreate that sauce with our own spring rolls at home. We have tried many recipes and haven't found one that tastes anything like were use too.How do I make the Thai dipping sauce they serve with their spring rolls?
Thai dipping sauce



1/2 cup fresh lemon juice (about 2 lemons)

1/4 cup Thai fish sauce

1-2 tablespoon brown sugar

1-2 Thai chile or hot red chili pepper or serrano chili, seeded and thinly sliced

1 garlic clove, minced



Combine all ingredients in a bowl; let stand 10 minutes.



Thai dipping sauce



1 cup sugar

1/2 cup water

1/2 cup white vinegar

2 tablespoons garlic, finely chopped

2 tablespoons fish sauce

1 1/2 teaspoons Chinese chili sauce (sambal oelek)

2 tablespoons lime juice

1/4 cup carrots, shredded



Combine sugar water and vinegar in a small saucepan. Bring to a boil and boil for 5 minutes.

Reduce heat. Stir in garlic, fish sauce and chili sauce. Simmer for 2 minutes.

the one i make with for my spring rolls:



start of with a small quantity.......half a small bowl of soya sauce....1/2 clove crushed garlic(optional).....a tsp grated ginger...dash of thai fish sauce....pinch of sugar(optional).....some chopped spring onion (only the greem part)...mix well!...the dip is ready! enjoy!

ingredients



陆 cup water

陆 tsp. tamarind paste

2 tsp. sugar

1 Tbsp. soy sauce (or wheat-free soy sauce for gluten-free diets)

1 Tbsp. fish sauce OR vegetarian fish sauce (see above)

1 heaping tsp. arrowroot powder (or cornstarch) dissolved in 3 Tbsp. water

1 clove garlic, minced

1 green or red chilli, finely sliced (and de-seeded if you want a milder sauce)

To make a tamarind dipping sauce, simply mix all dipping sauce ingredients together in a saucepan and heat.



When near boiling, reduce heat to low, stirring until sauce thickens.

Taste for saltiness, spiciness, and sweetness, adding more fish sauce (instead of salt), more sugar, or more chillies as desired.

(Note: the sauce can be served warm or cold. With fresh rolls, I personally prefer a warm sauce to contrast with the cold rolls)
