What's a good main course to serve with Thai noodles?

I have a recipe for Thai noodle stir fry that contains cashews, chili oil, scallions, red peppers and bean sprouts. Can anyone give me some suggestions for a meat dish to serve with it? I would prefer chicken or salmon, but the perfect beef or pork entree will do as well. Thanks! What's a good main course to serve with Thai noodles?
Actually, if you fry up some chicken in peanut oil and then cut it into bite size pieces, you could either stir it into your recipe, or just ladle some on the top of the noodles.

Serve it on a pretty dish, or a hallowed out pineapple (with the pineapple chunks as garnish) it is a nice presentation.

OOHHH Yummy... I'm hungry now!
Well do what you prefer, I would say boneless chicken breast grilled in a olive oil with parsley and lime. What's a good main course to serve with Thai noodles?
Seems like you answered your own question.
CHICKEN SATAY

2 1/2 lb. boneless chicken breasts

Marinade:

6 cloves garlic, chopped

4 tsp. coriander

4 tsp. light brown sugar

1 tbsp. black pepper

2 tsp. salt

1/2 c. shoyu

4 tsp. ginger, chopped

2 tbsp. lime juice

6 tbsp. oil

1/4 c. fresh coriander, chopped (for garnish)

Mix marinade ingredients. Cut chicken into 1 1/2-2 inch cubes. Add to mixture and marinate at least two hours.

Chicken Satay:

Thread chicken pieces onto one end of satay sticks. Broil or much better, barbecue, baste with marinade. Serve with peanut sauce for dipping.

Peanut Sauce:

1 c. chunky peanut butter

1-2 tsp. hot chili sauce

2 cloves garlic, crushed

3 tbsp. honey

1 tsp. cayenne pepper

1/4 c. lime juice

1/4 c. shoyu

1/2 c. peanut oil

Mix ingredients together. Should have a sweet/hot peanut flavor. Taste and adjust ingredients accordingly. What's a good main course to serve with Thai noodles?
dead monkey.
Why don't you try soy salmon ??

Get 2 salmon steaks and place on a piece of tin foil. Mix 1 Tbs of soy sauce with 1 Tbs honey and 1/2 tsp vinegar and a pinch of chili flakes. Cover the steaks in "sauce" cover with mushroom slices pull up the sides of the foil to keep juices in and bake in a medium hot oven (GM5) for approx 10/15 minutes till salmon flakes. Yum Yum .....

Serve with your noodles and Garlic bread.

You can do the same with chicken breasts but remember to pound them so they are thin and roll the "sauce" and mushrooms inside.
I would greatly consider serving SPICY CHICKEN with that. It's simply breaded chicken cooked in a garlic tomato sauce that clicngs to the chicken and produced a wonderful crust....it never fails to wow a crowd.
Fish however should be flash grilled rather unlike land meats which can be stir fried or stewed into curries, it overcooks too easily. I'd garnish with lime and basil or lemon grass.

In either case, cut back on the salt since the noodles are flavored, compared to if you served plain rice.

Maybe chicken skewers (lime juice glaze and little garlic) with a "fish sauce" (a key flavor in thai cooking) or a peanut sauce on the side for dipping. Use a george forman or a waffle iron if it's too cold to bbq.

ps: look up Tom Yum soup, an easy and really great starter.
try some fish fillet cooked in the oven its a very nice and spicy dish ... search for medeteranian fish fillet ... u should try it its really good
