Thai Chicken Satay with Peanut Sauce Recipe
Ingredients:
2 teaspoons curry powder
1 teaspoon grated fresh ginger
1 teaspoon minced garlic
1 teaspoon cumin
1/2 cup coconut milk
1 tablespoon grated lemon peel
1/2 teaspoon chili powder
1 pound boneless chicken in bite-size pieces
Directions:
To a heated skillet add curry powder, ginger, garlic and cumin. Cook over medium heat until curry is slightly browned, about 1 minute. Add this mixture to coconut milk in a bowl. Add lemon peel and chili powder. Add chicken. Marinate for 30 minutes. Put chicken pieces on skewers. (You could skewer onion pieces, green pepper, bamboo shoots or mushroom slices.) All you need to do is grill the chicken. Just add salt and pepper to the chicken for seasoning. The amount of time to cook this chicken depends on what part of the chicken you're cooking and if there's any bones. Cut up into chunks and saute it, I would use olive oil and garlic but a bit of any oil or a pat of butter works too. You'll know it's done because it is no longer pink in the middle, just test a chunk when you think the time is right. Use boness/skinless chicken breast and they are easiest to cut up when the are 1/2 way frozen.
