PAD THAI - it's so delicious, especially if you like pasta.

i'm not sure what the recipe is but i know it contains pad thai noodles, chicken, tofu, shrimp, green onions, carrots, a sweet peanut sauce, chopped peanuts, and some other stuff that's really good. good luck and enjoy!

THAI LEMONGRASS SOUP



8 c. chicken stock

1/2 - 1 bunch cilantro

1 can straw mushroom

16 large shrimps, peeled, deveined

1 c. snow peas

1/3 c. shredded carrots (just for color)

juice of 1 lime

1/2 - 1 tsp. crushed red pepper

1 chili pepper, cut into rings

4 tbsp. nam plah (you can find at Oriental food stores)

a few stalks of lemongrass (use about 6)



Bring the broth to a simmer. Add cruched red pepper and shrimp. simmer for 5 min. Add lemongrass and simmer for another 5 min. Add the rest of the ingredients and simmer a few minutes more. Be careful not to over cook or the vegitables will lose their color and will get limp.



THAI CHICKEN SATAYS



1 cup plain yogurt

1/2 cup coconut milk

1 tablespoon curry powder

1 teaspoon lemon juice

1 teaspoon grated fresh ginger

1/2 teaspoon salt

1/2 teaspoon black pepper

1 clove garlic, crushed

1 pound chicken tenders

6 (6-inch) pita bread rounds, cut in half

chopped fresh cilantro

plain yogurt



1. Combine 1 cup yogurt, coconut milk, curry, lemon juice, ginger, salt, pepper and garlic in medium bowl; reserve 1/3 cup marinade. Add chicken to remaining marinade; cover and refrigerate at least 8 hours.

2. Soak 12 (10-inch) wooden skewers in water 30 minutes; set aside.



3. Remove chicken from marinade; discard marinade. Thread chicken onto skewers. Place skewers on broiler rack coated with nonstick cooking spray; place rack on broiler pan. Broil 4 to 5 inches from heat source 4 to 5 minutes. Turn skewers; brush with reserved marinade. Discard any remaining marinade. Broil 4 minutes more or until chicken is no longer pink in center.



4. Remove chicken from skewers. Fill pitas with chicken and top with cilantro and dollop of yogurt.



Serving Suggestion : Serve with a fruit salad including pineapple, mandarin oranges and bananas.



AUTHENTIC THAI'S PEANUT SAUCE



4 teaspoons corn oil,

1/2 cup minced red onion,

2 tablespoons minced garlic,

1/2 teaspoon hot chili pepper

2 tablespoons sugar

2 tablespoons vinegar,

1/3 cup peanut butter,

1 cup of water



In a blender, combine corn oil, onion, garlic and hot chili pepper; blend for 1 minute

Empty the mixture into a saucepan and place over low heat until the mixture starts releasing aroma. Add peanut butter and mix well over low heat.



Add water and let it simmer for 10 minutes or until thickened.



Stir in vinegar and sugar; continue to simmer for another 1-2 minutes. Taste and add more vinegar and sugar if the mixture does not have the sour and sweet taste.



Place sauce in a shallow plate for satay dipping or pour over fresh salad.



COCONUT CAKE - THAI STYLE



1 box Mochiko sweet rice flour

3 c. water

1 1/2 c. sugar

1 (14 oz.) pkg. sweetened coconut flakes



Combine the first 3 ingredients and blend well. Add coconut flakes and mix well. Bake at 350 degrees until golden brown. (Sweet rice flour can be purchased at ethnic grocery store.)

something that really tastes good is like tofu, in a peanut sauce with red and green peppers, with some green beans, with a little coconut milk added in for extra taste..... this recipe is a little different but it came out great!!!





Tofu with Peanut Sauce

Made from soy beans, tofu is a delicious, nutritious, protein-filled treat!



oil for deep frying

14 oz. box firm tofu (drain water before cutting)

2 med. size minced shallots

2 cloves minced garlic

2 fresh Thai chilies

1 tablespoon peanut oil

1/2 cup coconut cream

1/3 cup peanut butter

1 tablespoon palm sugar

2 tablespoons fish sauce (can substitute 2 teaspoons sea salt)

lettuce leaves

1 tablespoon ground roasted peanuts

1. In a non-stick saucepan, heat the oil to approximately 375 degrees. Cut the tofu into 11/2 inch by 11/2 inch squares and drain on a paper towel before deep frying. Carefully drop the tofu squares into the heated oil and fry until golden brown.



2. In a heated wok, add shallot, garlic, Thai chili and peanut oil. Stir until golden brown and add coconut cream, peanut butter and palm sugar. Cook for 2 minutes, turn off the heat and add the fish sauce (or salt).



3. Arrange lettuce leaves on a plate and place fried tofu on top, followed with peanut sauce. Sprinkle ground peanut on top and serve immediately.



Yield: 4 serving



Green curry and yellow curry tastes really good too!!!!
black sticky rice with papaya is a good dessert
best thing is that go to oriental market or local grocery international isel and get coconut milk, red curry paste(thai) and get some lime leave (Kaffier), and lemongress. cut the chicken breast small and put all ingrediants together and some water to cook. also, get tom yum paste and put some shirmps in it make good tom yum goong.
