What are your favorite ethnic food recipes?

I love all types of food! Cambodian, Thai, Indian, Italian, Ethiopian, Mexican, Cuban, Creole, Persian, the list goes on and on and on! Haha. So I'm wondering, what are your favorite types of ethnic recipes? I'd love to try some new that have been recommended by people.

I love a lot of ethnic food as well though my favs are Arabic, Persian, Greek and Indian. You may want to try recipes like Chicken Tikka Masala, Kofta, Lamb Vindaloo, Eggplant Moussaka, etc. In addition to cooking some of these dishes yourself, I personally love the time-saving gourmet entrees from Saffron Road food. Vietnamese Spring Rolls

Mexican Fajitas and Enchiladas

Jamaican Beef Patties

Chinese Dumplings, Hot and Sour Soup , Egg Rolls, Crab Rangoons, and Shrimp Tempura

Japanese Sushi

Irish Corned Beef Hash and Shepherd's Pie

Italian Pizza, Ravioli, and Fried Calamari

Greek Gyros and Salad

Spanish Empanadas

I'll mention three.

Stefatho is a Greek stew, not difficult.

Gnocchi are Italian small dumplings, that can be bought and served with tomato sauce, grated cheese and seasonings.

And potato pancakes are Czech; look up a recipe online.

Since I'm a Italian-American, I do cook a lot of those ethnic foods, but I also love PRican, Spanish and Ukrainian/Polish/German foods. So my suggestion is to try some of those.
