Have a spicy eggplant (chinese or thai) recipe?

Preferably that uses hoisen sauce since I have alot of this!Have a spicy eggplant (chinese or thai) recipe?
Spicy Eggplant

-Serves 4



-1 large eggplant

-1.5 tbsp toasted sesame oil

-1.5 tbsp vegetable oil

-garlic powder

-1 tbsp chile-garlic sauce

-2 Thai bird chilies

-1 bunch scallions

-6 cloves garlic, minced

-3 tbsp fresh ginger, minced

-3 tbsp soy sauce

-2 tbsp vinegar

-1 cup water or stock

-1/4 cup hoisen sauce

-2 tsp cornstarch

-1 cup cilantro

-3 scallions

-salt/pepper to taste



Method:

Pre-heat oven to 400



Peel the eggplant if desired then chop into 1- inch cubes. Toss with 1 tbsp sesame oil, garlic powder, a couple pinches of salt and a couple pinches of pepper. Arrange (in a single layer) on a baking sheet and bake for around 20-30 minutes turning after 10 minutes or so.

While this is baking make a sauce out of the chile-garlic paste, garlic, ginger, soy, vinegar, stock, cornstarch and hoisen. Set aside. Heat a heavy -duty pan or Wok and add the rest of the sesame oil and the vegetable oil. When it is smoking add the scallions and the thai bird chilies. Stir-fry for a minute or two and add the roasted eggplant and sauce. Bring to a boil and cook for around 5 minutes adding water if needed. Just before serving taste for salt/pepper and adjust seasonings. Garnish with the scallions and cilantro.

Caution: Do not eat the thai bird chilies unless you can handle a lot of heat!!!Have a spicy eggplant (chinese or thai) recipe?
The eggplant is baked, not fried and tastes wonderful. I make this quite often鈥攊t's very easy to prepare.



Ingredients

2 cups Italian seasoned breadcrumbs

1 陆 cups grated Parmesan cheese divided

2 medium eggplants, peeled and cut into 录 inch slices

4 eggs beaten with 3 tablespoons water

olive oil (to lightly coat baking sheet)

1 (28 oz.) jarred pasta sauce of your choice. I use spicy red pepper sauce.

1 陆 cups shredded mozzarella cheese

Directions

Preheat oven to 350掳

In a medium bowl, combine breadcrumbs and 陆 cup Parmesan cheese. Dip each eggplant slice into egg mixture, then into breadcrumb mixture. Place eggplant slices in a single layer on a lightly oiled baking sheet and bake about 25 minutes. Evenly spread 1 cup sauce in a 13 x 9-inch baking dish.

Place a layer of baked eggplant slices over sauce. Evenly spread 1 cup sauce over eggplant slices, sprinkle with 陆 cup Parmesan cheese. Repeat layer. Bake, covered, 45 minutes. Uncover and sprinkle with mozzarella cheese. Bake 10 minutes or until cheese melts.Have a spicy eggplant (chinese or thai) recipe?
