Does anyone have any good NOODLE recipes?

Something good, and simple.



I found this awesome Thai noodle recipe, but it calls for a few things i dont have.



So, do you have, or know of any GOOD, SIMPLE recipes for noodles?



Im open to all kinds.

I'm guessing that your Thai noodles call for things like fish sauce, tamarind seed paste and other things that are NOT readily available in this country, unless you have a large Asian population in your area (as I do) and have access to Asian ingredients.........

There are a TON of recipes, and the Taste of Thai line of foods are pretty easy to find in the international section of your grocery store............

EDIT: What a blond I am!!!! I totally forgot about this one, I have served this at catering events (300+ people) and I had to print out copies of the recipe........

these will probably be found in the local supermarket:



rice vermicelli/udon noodles/soba noodles/asian noodles (whatever you can find is fine)

soy sauce (pretty common)

sesame oil (pretty common)

rice wine vinegar (pretty common)

edamame (you might be able to find frozen, just take them out of the little casing if need or leave it on)

cooked chicken breast cut into cubes

cilantro (optional, i usually skip it)

hot chili sauce or paste (siracha is gaining popularity and you might find it)

extra virgin olive oil

chopped peanuts (optional)



cook the noodles as directed

mix soy sauce, EVOO, rice wine vinegar, soy sauce, cilantro, sesame oil, and hot chili paste into desired consistency. there aren't set amounts. just mix and add to your liking. start out with a small amount of each and add more if needed.

add optional peanuts

rinse the noodles in cold water.

place on plate.

drizzle sauce on top. mix in chicken and edamame.

garnish with nuts.Does anyone have any good NOODLE recipes?
