THAI FISH CAKES (TOD MAN PLAA)
1kg redfish fillets (processed to a paste)
4tbsp red curry paste
1/2cup finely chopped cilantro (roots, stems %26amp; leaves)
4 kaffir lime leaves (sliced finely)
150g snake beans (sliced thinly into rounds)
1 egg (beaten)
2tbsp sugar
1tbsp salt
Combine all ingredients and mix well. Shallow fry in hot oil until a golden brown colour (about 1-2 minutes on each side).
It鈥檚 really up to you how salty or sweet you want the fish cakes to be. What I normally do is fry a couple, taste them and if more salt or sugar is needed, I just add it to the remaining mixture.
Serve with sweet chilli sauce.Anyone got a recipe for Thai fish cakes?

White Fish about a pound - cod or haddock
blend this with one egg seasoning a green chilli ...coriander (a handful) a spoonful of fish sauce and a spoon of palm sugar (dont need this but this is nice...) maybe add a spring onion too..and a spoonful of kaffir lime leaves ....
then blend the lot in a food processor and
divide into balls about fifteen and then into patties and then fry in a pan...
the fish patty reforms into a fishcake on frying and fry on a shallow oiled pan until golden brown all over...
serve with you r make of sauce..
Not too sure but think you would need to catch a Thai fish for starters.

use a good quality fleshy fish-cod or haddock(pomfret is good if you can afford it).poach gently for about 5 mins,drain and put on one side.mix together 1 tspn each of coriander and mint with a small finely chopped onion and finely sliced green chilli,and finally 1/2 tspn lemon grass.mix all this with the fish,add a medium precooked potato,mashed,and an egg yolk,season with salt and pepper.Beat the egg white lightly in a bowl.shape the fish mixture in cakes ,dip in the egg white and then breadcrumbs.Fry gently till golden brown,turning over 1/2way through cooking.
