Anyone got the correct distinct recipe for thai yellow curry fried rice?

i looked up the internet and cooked according to some recipes,but its complete no no.somebody who tried this out , do replyAnyone got the correct distinct recipe for thai yellow curry fried rice?
Thai yellow curry fried rice:



* Turmeric : 2 tsp

* Coriander seeds : 3 tsp

* Cumin 鈥?陆 tsp

* Salt : as per taste.

* Sugar : 1 tsp

* Black Pepper 鈥?few ( 4-5)

* Jaggery / brown sugar : 1 tsp

* Lemon Grass 鈥?storebought, 1tsp ( available in asian section of grocery stores.)

* Red Chillies 鈥?2 ( you can add more if you like it spicy hot ) 鈥?place it in a bowl and add hot water.Let it rest for 15-20 minutes.

* Yellow Onion : 陆 chopped.

* Soy Sauce 鈥?陆 tsp

* Lemon Juice 鈥?1 tsp

* Grated ginger 鈥?陆 tsp

* Ginger-garlic paste 鈥?1tsp

1. Grind the turmeric,corainder,salt,suger,jaggery,bl鈥?pepper,lemongrass into a smooth powder.

2. Then add the chillies alongwith the water,onions,soysauce and lemon juice,ginger and ginger-garlic paste.

3. Grind it into a smooth paste.

4. Set aside.



For the Fried Rice

* Rice: 2 cups, cooked rice , cooled.

* Onion : 1 陆 medium , diced

* Pepper : Red, Yellow, Green 鈥?sliced 鈥?total about 1 cup

* Potato 鈥?1-cubed (optional) 鈥?cooked in microwave for 6-7 minutes

* Baby corns 鈥?10 (you can use about 陆 cup of corn kernels too)

* Carrots and Peas 鈥?1 cup 鈥?cooked in microwave for abt 7-8 minutes.

* Tofu 鈥?fried 鈥?few ( optional)

* Lemon Wedges + Tomato slices 鈥?for garnish ( optional)

1. In a large pan / wok, heat 1 tsp of oil.

2. Add the onions and saute on high heat for 2-3 minutes.

3. Add red,yellow,green peppers and corn and other vegetables plus tofu.

4. Saute at high heat, till vegetables are slightly brown and well cooked.

5. Add rice, and keep adding few spoons of the yellow paste .

6. Stop when you get the desired color and taste.

7. Mix well.Add more salt / pepper as per taste.



Notes :

* Assemble all the ingredients for easier and faster cooking before you actually start cooking.

* Leftover rice is always a good option.If not, then always make sure the rice is cold.

* You can store the leftover curry paste for later use

I have a grandmother recipe, I bet you will love it

2 cup of streamed white rice (don't cook the rice too soft)

1/2 teaspoon curry powder

2 table spoon cashew nut

2 table spoon of chunk pineapple

1 table spoon of raisin

1 table of fry red onion

2 diced green onion and chopped cilantro (a pinch)

5 good size of shrimps or chicken or pork or tofu (dice)

1 egg

1/2 teaspoon of mince garlic

1/2 tablespoon fish sauce or you can sub with soy sauce

1 table spoon vegetable oil

Prepare:

1 Fry red onion until crisp and golden brown on a hi-heat stove, set aside

2 Use the same pan, add garlic and shrimp, cook until shrimp turn pink (if you use other kind of meat please cook them well), add curry powder, stir, add egg, stir well, add rice and pineapple stir well, add fish sauce, raising, cashew nut stir until everything mix well, put rice in the plate and top with fry red onion and green onion and cilantro on top
