Where can I find good thai cooking recipes?

I'm looking for a good recipe for pad thai curry. Anyone have one?Where can I find good thai cooking recipes?

A "Hot" Yellow Fish Curry - (Gaeng Lueng)

1lbfish fillet

2tblyellow curry paste - (to 3 tbspns)

5cupwater

2tblpalm sugar

1/3cuptamarind sauce

1/2cupsliced long beans

1/2cupsliced asparagus or bamboo shoots



Method :



* Take about a pound of filleted fish. If using mackerel discard the head and tail, cut the fish in half along its belly, discard the backbone. If using catfish just chop it into chunks, and make note of the bones.

* In a large pot, add Yellow Curry Paste and water bring to a boil. Add the fish, palm sugar, tamarind sauce, sliced long beans and sliced asparagus or bamboo shoots. Bring to a boil, reduce the heat until it is just boiling and cook until the fish is cooked (about 5 minutes).

* Serve over Thai Jasmine rice with the usual Thai table condiments, as well as Thai chili powder.

* Comments: This dish is

*meant* to be hot, but it isn't meant to eat the glaze off the plate, so be sensible the first time you try it. Thais usually have several dishes, that complement each other. A good complement to a hot dish like this is our relatively mild gai yang Isan.

Ingredients :



4tblrice vinegar

3tblcucumber, very coarsely chopped, or sliced

2xshallots, chopped

3xred and green prik ki nu, (birdseye chilies), thinly sliced.



Method :



* Combine the ingredients, and leave to stand overnight.

* Each diner should have a small bowl of nam jim and a small bowl of a jad.

Method :



* Spray rice cooker container with vegetable non-stick cooking spray. Add all ingredients except lime juice and peanuts. Cover and cook until rice cooker shuts off. Careully remove cover. Gently stir in lime juice and peanuts.

250gmpetai seeds

300gmmedium-size prawns shelled but leave the tails on

1xbig onion -- cut in rings

5xcili padi sliced coarsely

1xred chilli seeded and cut in slants

1tblchopped garlic

2tblcooking oil

Sauce:

1tbltamarind paste and 3 tbsps water - mix these ingredients and strain to get the tamarind juice

2tblNam Prik Pao (chilli paste in oil)

1/2tblNam Pla (fish sauce)

1tblMaggi chicken stock granules

2tblsugar

1dshpepper

1xsalt to taste

Thickening:

1tspcornflour

2tblwater

* Method:

HEAT oil in a wok and saute chopped garlic until fragrant. Add in onion rings and stir-fry lightly. Add in prawns, petai and the rest of the ingredients. Mix in the sauce ingredients and fry till heated through. Thicken with cornflour mixture and add 1 tbsp oil for glaze. Dish onto a serving plate and garnish with coriander leaves.

6ozRice noodles

2ozSesame oil

6xGulf shrimp

1xEgg

3ozJulienne veggies

2ozFirm tofu, cubbed

1ozBasil mint cilantro

4ozReserve sauce

FOR SAUCE

2tblChopped garlic

1/3cupCatsup

1cupFish sauce, available at most asian food stores

1/3cupSambal

1cupWhite vinegar

1cupSugar

GARNISH

Lime wedges

Toasted peanuts

Scallions

Bean sprouts



Method :



* 1. Mix all sauce ingredients together and chill.

* 2. Pre-Heat sesame oil in wok

* 3. After sauce has chilled and wok has heated, add shrimp and tofu.

* Stirfry.

* 4. Add sauce.

* 5. Add noodles, veggies and egg. Stirfry together.

* 6. Add herbs, cook until noodles are soft.

* 7. Place in bowl and top with garnish.
