im interested in cooking thai food, and the thai restaurant i love makes this really tender yellow chicken curry w/ poetatoes and carrots and of course chicken...and they also make this reeally good sweet and sour sauce with their sweet sour fish. they also make really good thai chicken cashew/ beef cashew nut dish!!!
i look up thai recipes, but it doesn't taste the same. i look up stuff from EVERYWHERE. any one have a tried and true thai recipe?

Thai Yellow Chicken Curry
1/2 lb. Small red-skinned potatoes
1 lb. Boneless, skinless chicken breasts or thighs, or a combination of both, cut into 1-inch cubes
2 Tbsp. Vegetable oil
1 Tbsp. Grated fresh ginger
1 Tbsp. Minced Fresh Garlic
1 Tbsp. Yellow or Massaman curry paste (you can use more or less depending on how hot you like it!)
1 16 oz. can of coconut milk
1 teaspoon Brown sugar
1 Tbsp. Fish sauce (or more to taste)
Lime juice
Fresh basil or cilantro to garnish
Cut the potatoes into 1-inch cubes and boil until just fork tender (about 8 minutes.) Remove from heat and drain at once.
Heat the oil in a large skillet over medium heat. Add the chicken and saute until lightly browned. Add the garlic and ginger to the pan with the chicken, season with salt and saute, stirring often until ginger and garlic is fragrant (be careful not to let the garlic burn!)
Add the curry paste to the pan along with two tablespoons of the coconut milk. Stir everything until the curry paste is nice and fragrant (a few minutes.)
Add the rest of the coconut milk, potatoes and brown sugar to the pan, stir and let simmer for about ten minutes. Do not let it come to a boil or the coconut milk will separate. Season to taste with fish sauce and lime juice. Garnish with fresh basil or cilantro and serve.
You can add other vegetables such as carrots, onion, bamboo shoots and eggplant. I usually just make it according to what I'm in the mood for or what I have on hand.Any body have a really great thai recipe out there?

Here's an easy recipe that is always popular at our house. And it is quick.
Thai Chicken salad
1 tablespoon oil
1 tablespoon chopped ginger
1 stalk lemongrass chopped
3 red chillies, chopped
500g (1lb) minced chicken breast
1/4 cup lemon juice
1 tablespoon fish sauce
1 red onion sliced thinly
1 cup coriander leaves
2 tablespoons shredded basil
lettuce leaves to serve
Heat the oil over high heat. Add the ginger, lemongrass and chilli and cook for 1 min. Then add the chicken and cook, stirring to break up lumps, for 5 mins or until cooked.
Remove the chicken and cool. Combine the lemon juice and fish sauce, pour it over the chicken. Add the onion, coriander and basil. Serve the salad in small bowls with side plates of crisp lettuce leaves.
