I just tried Thai food for the first time this month and loved it. I had a shanghai noodle dish in a brown sauce. I'm not quite sure what it was but it was good. Anyone have some similarThai noodle recipes anyone?
Pad Thai is probably the most famous noodle dish from Thailand, but this dish does NOT have a brown sauce.
Sounds like PAD SEE EW (my personal fav!).
Pad see ew unites wide, flat rice noodles, similar to chow fun noodles, with broccoli, egg, bean sprouts and a sweet-smoky “see ew” sauce. With proper pad see ew, broccoli retains some snap. This dish is perfect for newcomers to Thai food, or for people who don’t like alot of spiciness.
Ingredients:
1 bunch of Thai broccoli, stemmed, plucked, and washed (To prepare, remove bottom inch of stems where it tends to get woody. Cut in 2-inch sections, keeping flowers and leaves.)
1 package of rice noodles (You should look for either flat, broad rice noodles or rice noodle sheets. Look for the kind wrapped in plastic, not in sealed plastic bags, since they tend to be fresher.)
2 small chicken breasts or any other meat of your preference
3 eggs
5 cloves garlic, minced
oyster sauce, to taste
soy sauce, to taste
1 tbsp red chili flakes (optional)
METHOD:
If your are using fresh flat rice noodles that are not pre-cut, cut them into strips of 3/4 inch wide. Otherwise cook the noodles according to package directions.
Cut Chinese broccoli into 2 inch long pieces. Halve the stems lengthwise because thick stems take longer to cook. You are going to want to cook them at the same time.
Heat a wok to high heat and then add 2 tbsp of oil. Drop in the chopped garlic and stir. Add the sliced chicken. Stir to cook the chicken. When the chicken is somewhat cooked or turned from pink to light brown, add rice noodles and chili flakes. Stir to break up the noodles. Add the oyster sauce and soy sauce.
Stir to mix the seasonings into the noodles and chcicken. Open a spot in the middle of the pan, and drop the egg in. Scramble the egg until it is almost all cooked (not watery any more). Fold in the noodles and mix them all. Add the Chinese broccoli, stems first. I usually add half of the Chinese broccoli and stir until it wilts and then add the rest. But if you have room in your wok, you can cook all the Chinese broccoli at once. As soon as the Chinese broccoli is cooked, turn off the heat.
Put on a serving plate and sprinkle white pepper on top. Serve with the usual noodles condiments; sugar, fish sauce, vinegar and dried ground pepper. I usually like mine with ground chili peppers and vinegar.Thai noodle recipes anyone?
