I love Thai food....anyone have any tried and true recipes?

I usually make Pad Thai or sometimes I'll do a red or green curry, but today I got something that was so good. It was Chicken, eggplant, bamboo shoots, green and red peppers, thai basil in a red chili sauce. I wanna try to make it...does anyone have any really good Thai recipes they would like to share?I love Thai food....anyone have any tried and true recipes?
mmmmmmmmmmmmmmmm i LOVE Thai food i know this recipe Ingredients:

2 Tbsp vegetable oil

1 cup purple onion, sliced

1/2 cup your favorite fresh or frozen vegetables,

cut (corn, carrots, peas)

2 cup cooked Thai Kitchen Jasmine Rice

(cooled at least 1 hour or refrigerated leftover rice)

1 Tbsp sugar

1 to 2 Tbsp Thai Kitchen Premium Fish Sauce

1 tsp water

3/4 cup cooked chicken, shredded

1/4 cup green onions, chopped

Garnish: fresh cilantro and lime wedges

Directions:

Heat oil in a wok or large skillet. Over medium heat, cook onion and vegetables until tender.

Add rice, sugar, fish sauce and water. Stir-fry for 2 to 3 minutes until rice is cooked.

Stir in chicken and green onions. Serve with cilantro and lime wedges as garnish.I love Thai food....anyone have any tried and true recipes?
2 tablespoons green curry paste

1 tablespoon cooking oil

2 cans (5.6 oz each can) coconut milk

1 cup sliced chicken breast

20 -25 Thai eggplant, mini size

1 - 8oz can bamboo shoots

6-8 kaffir lime leaves, each leaf torn in two

1 tablespoon fish sauce

1/2 tablespoon sugar

5 Thai chile peppers

fresh basil leaves for garnish



In a wok, heat the oil and fry the curry paste for one minute. Add coconut milk and bring to a boil. Add chicken, eggplant, bamboo shoots and kaffir lime leaves. Season with fish sauce and sugar. Keep on medium heat until chicken is cooked, then add basil and chile peppers
