My husband and I are looking to widen our vegetarian cooking skills and are particularly interested in Thai food. Yummy! One of our favourite dishes is Thai yellow curry soup with potatoes and green beans.
Does anyone have any suggestions or advice for how to cook such a dish? I'm finding google to be rather unreliable for Thai recipes. Also if you have any other Thai vegetarian recipes you'd like to share, please do!

I don't have any specific Thai Recipes, but I did a search on Barnes and Noble .com and found a bunch of listings for some good That cookbooks that have great step-by-step pictures to help get you started:

I'm eating Fried Rice with peanut butter mixed in for my breakfast right now. It's quite simple. I saute chopped onion, carrot, green cabbage, and zucchini in oil until the onions are see-through, I add 1 egg and scramble it in the pan, I add 1tbsp of soy sauce and 1 tbsp of honey and stir it in, I add the cooked rice and stir it in, then I add the 1/4 cup peanut butter last. Not specifically Thai but a good use for the last of the bag of carrots, a bit of onion and the last egg.
Take note that most Thai recipes make use of or involve herbs found easily in the tropical jungles of Thailand - another good bit of homework for you would be to visit your local Asian market for sources of fresh Thai lemongrass, basil, and cilantro. Thai recipes also use rice and Chinese noodles equally, and a good Asian market will have good prices on Chinese noodles, rice noodles, and good pearl rice. You can also find good miso, bean curd, and curry sauces ready to go.
