What are some great recipes for Thai food?

I really like Thai food, especially Spicy Peanut pad Thai, and sweet chili noodle mixture stuff. You can tell by my limited knowledge that I just go out and eat the stuff. Can anyone tell me some good recipes??? What are some great recipes for Thai food?
The food network's website has plenty of recipies for Thai food. One of my favorities is Alton Brown's pad thai. Just type in thai food or pad thai into the website's search engine.



There used to be a great show on some cable channel called Thai Food Tonight, which is now off the air, but the website is still up where you can browse recipies and learn about ingredients.



Be warned, though, because a lot of the exotic ingredients used in Thai food are hard to find in the regular grocery store. I you live in a city, asian specialty food stores will have people working there to recommend ingredients. If you don't have access to a store like that, a lot of times natural food stores have a good selection of asian products.



Depending on how serious you are, you could order hard to find ingredients from online grocers. And I've also found that most of the Thai cookbooks in bookstores are really good. There's a lot of seafood in Thai cooking, but you could always substitute chicken in any recipe.



What are some great recipes for Thai food?
Thai Peanut Sauce



1 tablespoon vegetable oil



2 tablespoons minced shallots



1/2 cup smooth peanut butter



1/2 teaspoon ground cayenne pepper



2 tablespoons sugar



1 tablespoon fish sauce (Nam Pla)



1/2 cup canned coconut milk



2 tablespoons lime juice



1. In a medium size saucepan, heat the oil over high heat for a minute before adding the shallots. Stir until shallots turn translucent, about 1 to 2 minutes.



2. Add the remaining ingredients, except for the lime juice. Reduce heat to medium-high. Continue to stir until the peanut butter is dissolved and the sauce begins to boil. Let cook another 1 to 2 minutes.



3. Remove from heat and let cool before adding the lime juice. Serve or refrigerate. It will keep for a couple of days. If it has been refrigerated, heat over low heat and add a little water if it seems too thick.

you are in luck i am an Italian chef who opened a place with a good friend who just happens to be Thai....so i learned what happens to be the best pad Thai i can find....the prep is simple just some chopping and boiling, and putting it together is fun.....this ratio of ingredients for the sauce will give you enough for 10 - 15 dishes worth.



in a medium sauce pot add 3 cups white or rice wine vinegar, 1 cup of sugar, 1/4 cup fish sauce...( local Asian market or internet not much $).... and now comes the most work,... get a hot sauce you like and add it until you think its enough,,,,, i add about two tablespoons of a brand called sambal oelek it is i believe Korean, but in the same places as the fish sauce.....bring that to a boil....when it is boiling hard turn it off and cool....this sauce is good indefinitely in your fridge.....



the noodles are a specific type ..they are a rice noodle that is found..... well you get the idea by now.....they are linguine to fettucine size, get the ones you you like......put the noodles in coold water in the fridge overnight.....now here is the rest of the ingredients......

green onion, sliced how you like

tofu or egg, both a fried ahead

a can of plain roasted peanuts.

chopped garlic

red pepper flake

bean sprouts....fresh or if you are hard up there is canned....

fresh cilantro....

sections of lime

Thai basil

fresh mint

and what ever protein you like....i.e. shrimp, chicken, beef, pork, even just a mix of vegetables.....what ever you like.... have larger pieces of meat cut into pieces that resemble size of a jumbo shrimp....



okay.....i love this recipe so its worth the read.......





so because this is a rice noodle the dish should be made and consumed quickly.....start out by placing a 10 - 12 inch frying pan on a high flame and add two table spoons of canola oil and wait for a little smoke to rise from the oil.....add your protein

sear for a minute and add garlic, red pepper and peanut...cook together for another two minutes tossing the pan regularly. now add 1/4 cup of sauce to the pan with everything in it... cook together until boil and let it do so for about a minute....now add 6 oz of soaked noodles to the and and toss once and return to the flame and leave alone for about two to three minutes or until sauce is almost all absorbed turn off the flame and some green onion, tofu or egg, and toss once ....move the contents to a bowl.....on top of everything place bean sprouts, more onion and peanut....now take and couple of leaves from each cilantro mint and basil....and rip them up with your hands and throw them on top,,,,,lastly toss on some of those lime sections.....this dish is all about what you like about it....play around and adjust ingredients to find what you like ....you can even add change and delete ingredients so have fun and remember me for best answer thanks......
