I am looking for a recipe for Pad Pak. Yesterday I went out for Thai food, and got my usual Pad Pak its toooooooooo good. I want to learn how to make it at home - I know it will never taste as good as the restaurant but even if it's close :-) I'll be satisfied. It's chicken Pad Pak and it says that it's in an oyster sauce. It has lots of veggies (bok choy, carrots, broccoli, bean sprouts).

Pad Pak is basically a generic name for stir fried veggies. Did you want the hot and sour version (pad pak priew waan) or is it just a milder dish you're looking for? You could use the recipe for pad pak naam mun hoy (broccoli in oyster sauce) and add chicken and mixed veggies of your choice, too. Most stir fries are very free-form recipes and are customarily adapted to use whatever is available.
Pad Pak Nam Mun Hoy
4 tbsp vegetable oil
3 garlic cloves, crushed
1 pound broccoli, cut into small florets
6 tbsp Oyster sauce
Heat oil in wok, stir-fry garlic until brown. Add broccoli, stir-fry 3 minutes over low heat. Add oyster sauce, stir 1 more minute. Transfer to serving dish, serve hot. Eat it, go make some more.
From Recipezaar, a recipe for Pad Pak Priew Waan:
* 2 tablespoons vegetable oil
* 1 teaspoon finely chopped fresh ginger
* 3 crushed garlic cloves
* 1 small chopped red onion
* 1 cup thinly sliced carrot
* 1 cup diagonally sliced green beans
* 1/2 cup green cabbage, cut into 2 cm squares
* 1 cup thinly sliced zucchini
* 1 teaspoon salt
* 3 teaspoons white sugar
* 1 tablespoon soy sauce
* 2 tablespoons fish sauce
* 2 tablespoons fresh lime juice
* 1 fresh red cayenne pepper, thinly sliced
* 2 tablespoons chopped green onions
* 4 tablespoons chopped fresh coriander
Heat wok; add oil. Stir-fry the ginger, garlic, and onion until soft. Add the carrots and green beans and stir-fry for 2 minutes. Add the cabbage, zucchini, salt, sugar, soy sauce, fish sauce, lime juice, and cayenne. Stir-fry for another 2 minutes until all the vegetables are tender crisp.
