1 tbsp vegetable oil
2 tbsp green curry paste (according to taste)
1 tbsp soft dark brown sugar
1-2 thick stalks lemongrass, fat ends bashed with a rolling pin (optional)
750g/1陆lb skinless, boneless chicken, cut into chunks (use breast and/or leg meat)
6-8 kaffir lime leaves, torn into pieces (if unavailable, use the grated zest of 1 lime)
400ml/14fl oz coconut milk
good shake of Thai fish sauce or light soy sauce
small handful of coriander, roughly chopped
陆-1 lime, juice only
Method
1. Heat the oil in a wok or large frying pan. Add the green curry paste and sugar and cook over a fairly high heat for about a minute, stirring with the lemongrass, if using. Reduce the heat slightly and stir in the chicken pieces and lime leaves or zest until coated in the paste. Add the coconut milk, fish sauce or soy sauce and bring to a simmer, cooking for 25-30 minutes until thickened slightly. Stir in the coriander and lime juice. Check for seasoning, adding more fish sauce or soy sauce if needed.
2. The curry is now best left to sit for a few minutes so the sauce becomes creamier. You will also taste the true flavours of the curry paste ingredients when it's slightly cooler. Here is a great one that dosnt use store bought curry paste if you are into it. If you have a mortor and pestal ,cool, but if you don't just use a cuisanart. It makes enough for a couple of curries so keep it in the fridge
Curry Paste
5 green thai chili (sm %26amp;skinny)
2kefer lime leaves
1 bnch cilantro
1sm bnch mint
5 clove garlic
1sm coin ginger peeled
1 in lemon grass(inside only)
pinch salt
2T peanut oil
smash or puree until paste
In mod hot pot or pan heat 2T peanut oil or canola, corn, watever
add paste and "sweat" slowly for 2 min. If it starts to get brown, your too hot.
Add 1 cup chicken broth and 2 cans coconut milk, mix well and add
1T sugar and reduce by 1\3. This is a great broth for sea food , chicken, or beef. The paste can be added to your prawns when you saute them. nice.Can anyone please give me the recipe for Thai Green Curry, im thinking of making a prawn one.Many thanks?
Thai Green Curry with Prawns
1 tbsp vegetable oil
1.25cm/陆 inch piece root ginger, peeled and grated
1 clove garlic, crushed
225g/8oz raw tail-on tiger prawns
1 (350g) pack fresh cut mushroom stir fry
2 tsp Thai green curry paste
1 tsp fish sauce
pinch of caster sugar
150ml/录pt reduced fat coconut milk
To serve: Thai jasmine rice, prawn crackers
Heat the oil in a large frying pan or wok, add the ginger, garlic and prawns and stir fry for 2 mins until the prawns change colour 鈥?add a tablespoon of water if they begin to stick. Add the mushroom stir fry and stir fry for a further 1 min.
Add the remaining ingredients and simmer for 2 mins. Serve spooned over the Thai rice and serve straight away.
