Anyone know a simple recipe for spicy Thai peanut sauce?

I have looked up recipes for it to go with a chicken satay, but I can't find a simple recipe for the sauce that doesn't have things like fish oil or coconut milk, or things I don't have in the house. I would just go out quickly and pick up some coconut milk, but I would only need a bit, and I will likely never use the stuff again.Anyone know a simple recipe for spicy Thai peanut sauce?
I was in the same sitch a while ago and stumbled on this easy recipe, that turned out better than the seriously more complicated ones (and no coconut milk!)



2 Tblsp. Peanut Butter (either kind- up to you on chunkiness scale)

2 Tblsp. Vinegar (ACV for milder, white for more bitterness)

2 Tblsp. Soy Sauce

1 Tblsp. Brown Sugar (either light or dark)

1 tsp. Garlic powder

1/8 tsp. dried powdered Ginger

1/8 tsp. hot pepper flakes



Combine and microwave @ 2-3 minutes.



*You can whisk it easier after like a minute in the microwave.



*This doesn't make a lot, I often double or triple the recipe



*I like more spice so I put in more red pepper flakes (the dried kind that some people put on pizza)



*Do a sample batch and adjust to your tastes for additional, but it's pretty good as-is for most.

Sorry, but for real Thai taste, you'll have to swing by an Asian market and pick up a few essentials. It's an entirely different spice world and you'll have to be equipped if you want it to taste right.



Thai Peanut Sauce:



1/2 cup unsalted roasted peanuts



1 tablespoon peanut oil, plus more to taste



2 fresh Thai chiles or other small chiles



1 1/2-inch-thick slice fresh ginger



4 garlic cloves



1/3 cup canned unsweetened coconut milk



2 teaspoons low-sodium soy sauce



4 teaspoons fish sauce



1 teaspoon granulated sugar



1 tablespoon fresh lime juice



Pinch salt (add to taste, as fish sauce can be very salty)



1/2 cup finely minced cilantro leaves and stems



To make the peanut sauce, add the peanuts along with the peanut oil to a food processor. Blend, on high, until the peanuts form a rough paste. Add the rest of the ingredients except for the cilantro; blend until smooth. Stir in the cilantro and thin with peanut oil to taste.

Easy peanut sauce



Ingredients

3 tbsp Crunchy Peanut Butter

2 Shallots

1 clove Garlic

陆 tsp Brown sugar

陆 tsp Chilli powder

Sliver of terasi (shrimp paste)

1 tbsp Peanut oil

1 tbsp Tamarind water (substitute with lime juice if not available)

200 ml Water



Description

Delicious peanut sauce for serving with satay skewers. Make plenty of it because it is always very popular!

Instructions

Peel and grind shallots and garlic finely and mix in chilli powder.

Fry the ground ingredients in a saucepan with the oil on a medium-high heat for a few seconds, stirring constantly.

Stir in the remaining ingredients and mix well.

Bring to the boil and reduce until the sauce is thick, still stirring constantly. If desired, a thickening agent such as corn starch may be used to thicken the sauce.



Notes

Chop up some cooling cucumber into chunks to enjoy with your satay skewers and peanut sauce!
Use coconut milk in curry!
