Anyone have a recipe for the thai dish hai lam?

This place in NYC down the street from where I worked made an awesome dish called Hai Lam. Ive since moved to a rural area and would love to be able to replicate!Anyone have a recipe for the thai dish hai lam?
-3 cups rice, wash and drain

- 3 cups chicken stock (Or one chicken stock cube to 3 cups of water)

- 6 cloves garlic, minced finely

- 2 inches long of ginger, crushed

- salt to taste



1. Heat 1 tbsp of cooking oil and 30g butter.

2. Add the garlic and saute till you can smell its fragrance. Don't let the garlic turn too brown or you'll have unslightly brown garlic pieces in your rice.

3. Add the rice grains into the wok and stir until the grains are well coated with the oil/butter/garlic.

4. Turn them into the rice cooker. Add the stock and ginger, and let it cook away.

5. Once done, use a fork to stir through the rice to separate the grains.



To serve it beautifully (to entice the finicky eaters further), simply scoop the rice into a small rice bowl, pressing the rice down into the bowl. Then, turn the bowl over onto a flat plate. The rice should have that "glistening" look.



This rice is so flavourful that you can even eat it on its own!



I serve mine with fried chicken, brocolli (with oyster sauce), clear cabbage soup (using real chicken stock and garnished with chopped scallions before serving), and chilli dip... well, in our part of the world, most cannot live without chillis, as much as we cannot live without rice



So, if you have the time, try also, this "chicken rice" chilli that is very similar to the ones served at chicken rice stalls outside...



Combine: Grounded ginger and chilli, finely minced garlic, lime juice or white rice vinegar, sugar and salt to taste, and a little bit of oil.





The hailam way is add in chciken stock in the chili sauce.





To make the sesame soy sauce that usually go with the chicken rice
